1 lb hamburger meat
1 small onion, chopped
1/2 tsp. cumin
1/2 tsp. chili powder
1 can of sliced black olives
1 can of cream of mushroom soup
1 can of Enchilada sauce
8 oz of shredded colby jack cheese
6-8 corn or flour tortillas(Charlie likes corn; I like flour; we trade off) :)
Brown the meat with seasonings and saute the onions in with it. Once that is done, add in the olives and let it heat and then add in 3/4 of the cheese and let it melt - mix it all together. Fill tortillas with the meat mixture and roll up. Combine the mushroom soup and enchilada sauce and pour on top. Top with remaining cheese. Bake at 350 for 30-40 minutes.
*Or you can follow instructions and instead of rolling up the tortillas do this:
1. Spray 9X13 pan with cooking spray
2. Add thin layer of soup mixture
3. Add some meat mixture on top of that
4. place tortillas on top of meat mixture like layering lasagna
5. continue layering soup mixture,meat mixture,tortillas; on top pour remaining soup mixture and add more shredded cheese. Continue baking according to above instructions.
This may sound complicated but it is SO easy!!! Any questions? Sometimes I am not clear with instructions! Let me know & I will try to clear it up for you! :)

Julie's crescent roll chicken & dumplins.....
I combined two recipes to get this delicious version and I made a few adjustments the 2nd time I made these. Feel free to tweak this recipe as much as you like. One word of caution: only put the recommended amount of filling in the dumplins. That is all those crescent roll dumplings can hold. Any more and they will explode! (Yes, I am saying, "dumplins" on purpose. Dumplings just doesn't sound right to me, ya'll! :)
4-5 chicken breasts, boiled and chopped up fine (I cooked mine in crockpot all day with onion & celery and poultry seasoning to make an excellent broth)
1 8 oz. pkg. cream cheese, softened
1 can cream of mushroom soup
1 can cream of chicken soup
1/2 c. broth
1/2 c. milk
4 tbsp. butter, softened
3 cans buttery flaky BIG crescent rolls
1/2 tsp. garlic powder
1/2 tsp. salt or just use 1/2 tsp. garlic salt and no powder
black pepper & salt for dumplins.
Preheat oven to 400. Spray 9 X13 baking dish with cooking spray. Mix in med. size bowl, chicken, cream cheese & garlic powder & salt or just garlic salt. In another med. size bowl, mix together soups and broth and milk.
Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of chicken mixture on each diamond, fold dough over and press ends together to create dumplings. Line a 9x13 inch baking dish with one layer of dumplings.Place some softened butter on top of each of the dumplings.Bake 15 minutes or until lightly browned. Pour soup mixture on top of dumplings. Place foil on top of pan now or dumplings will brown too quickly and not be done all the way through. Bake another 15-20 minutes or until the dumplings are tender and cooked through and the top is brown and bubbly .

mexican cornbread...

1 small can diced green chillis,drained
1/2 tsp. cumin
1 tsp. chili powder
Cornbread Mixture
1 cup yellow cornmeal
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 cup milk
2 eggs
1 can creamed corn
2-3 cups shredded colby/jack cheese
Directions
1Brown together the ground beef,seasonings, onion and chilis; drain well.
2In a bowl mix together the cornbread ingredients.
3Lightly spray a 13 x9 in baking dish with Pam.
4Pour 1/2 of the cornbread mixture into prepared dish.
5Top with the meat mixture then sprinkle on the cheese to cover.
6Pour the remaining cornbread mixture on top.
7Bake in a 350 degree preheated oven for 45 mins or until the top is lightly browned.

Stuffed Cabbage Casserole (without the work) ;)
1 1/2 lbs ground beef or pork (or use the meat in my homemade Spaghetti Sauce)
1 medium onion, chopped
1 dash garlic powder
1 dash oregano
32 ounces spaghetti sauce(or 1 recipe homemade sauce)
1/4 cup rice
1 dash basil
1 head cabbage
1 lb mozerella cheese, shredded
Directions:
1Shred, boil 3 minutes and drain cabbage.
2Brown onion and meat and Drain.
3Place cabbage in casserole dish.
4Place meat mixture on cabbage.
5Add garlic powder, oregano and basil on meat.
6Add spag.sauce and rice.
7Layer like you do lasagne.
8Top with cheese.
9Cover and bake 1 hour at 350F degrees

1(8 oz) pkg. cream cheese
1 (4 oz) jar salsa
1 (4 oz) can diced green chilies

poppyseed chicken....
Poppy seed chicken
2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 tbls of poppyseeds (I don't measure - I just shake a ton in)
Ritz crackers
1 stick of butter
Mix the first 5 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top. Put more poppy seeds on top. (just sprinkle).Bake for 20-30 minutes at 350.

Sausage Potato Soup..
1 lb. JC Potter Hot sausage
1 small onion, chopped
8 cups diced potatoes
1 (8 oz) pkg. cream cheese, softened
1 can cream of mushroom soup
1 can Swanson's MSG free chicken broth
1 tsp. black pepper
3 cups milk or half and half
Lawry's seasoned salt to taste
4 TBSP. butter, melted
Cook sausage.Cube potatoes. Chop onion. Place potatoes and onion in crockpot. Mix soup, broth, melted butter & softened cream cheese together in small bowl. Stir. Pour over potatoes and onion. Add black pepper and seasoned salt (I can't remember how much I used, maybe 1 TBSP?). Cook on low for 8-10 hrs or on high for 5 hrs. Serve with corn muffins (and I made a pumpkin pie, too!)

Jessica Simpson's Chicken & Dumplings (very similar to crescent roll chicken)
*serves 6.
This recipe is very similar to Crescent Roll Chicken and it's very good! :) Maybe she can cook, after all?!
3 tubes croissant rolls
1 small rotisserie chicken, skin discarded and meat removed from bones
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup chicken broth
salt and freshly ground black pepper to taste
Preheat oven to 400ยบ. Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of rotisserie chicken on each diamond, fold dough over and press ends together to create dumplings. Line a 9x13 inch baking dish with one layer of dumplings.
Combine soups and chicken broth; pour over dumplings. Season with salt and pepper and bake until the dumplings are tender and cooked through and the top is brown and bubbly - about 30 minutes. Lay foil across pan about halfway though, because dumplings will brown too quickly.

Rotini with two cheeses (fancy mac & cheese)
*Rotini with Two Cheeses
12 oz. rotini pasta
1 & 1/2 Tbsp. salt
1/4 c. butter
1/4 c. all p. flour
1 Tbsp. seasoned salt
2 tsp. dry mustard (I use spicy mustard)
1/4 tsp. white pepper
3 & 1/2 c. milk
1/2 lb. mushrooms, sliced
4 green onions, sliced
1 Tbsp. Worcesteshire sauce
4 oz. Swiss cheese, shredded
4 oz. cheddar cheese, shredded
1. Add rotini and salt to large pan of boiling water; cook, stirring occasionally until almost but not quite tender.6 to 7 minutes. Drain.
2. Melt butter in med. saucepan over med. heat. Stir in flour, salt, mustard and pepper until smooth; cook and stir until bubbly. Gradually whisk in milk; cook and stir until mixture thickens and bubbles for 1 minute.
3. Add mushrooms, 3 of the onions and worcestershire sauce to saucepan; mix well. Add swiss and cheddar cheeses; cook and stir over med.-low heat until cheeses are melted.
4. Combine rotini and cheese sauce in large bowl; mix well. Transfer to greased 2 qt. baking dish. Bake in preheated oven for 45 minutes (350 degrees). Garnish with remaining green onions.

Place a spoon full of the chicken mixture in the middle and bring four corners up around it and twist top to secure. If you want you can add some butter on top . Gravy is one can of cream of chicken or mushroom and I add milk and salt and pepper. Put Crescent roll chicken on top of a plate of rice and cover in gravy!

Gradually whisk in milk and cook until thickened. Season with salt and pepper. Stir in sausage. Simmer for 10-15 minutes. If gravy is to thick, stir in a little more milk.

Julie's easy beef stew...
6 slices leftover roast, cubed
Roast gravy (app. 2-3 cups)(make gravy by cooking your roast with 1 can cream of mushroom soup; 1 packet onion soup mix and water to cover roast; cook in crockpot all day on low)
minced garlic (1 Tbsp)
4 baked potatoes, cubed
olive oil
1 small bag of frozen peas & carrots
1 tsp. tarragon leaves
1 bay leaf
3-4 shakes of Worchestire Sauce (season as you like; this is a key ingredient)
Lawry's seasoned salt (to season as you like)(about 2 shakes for us)
Red pepper (season as you like) (about 2 shakes for us)
In dutch oven over med. heat saute garlic, onion and potatoes in olive oil for just a few minutes. Add cubed roast and gravy, worchestire sauce, bag of peas and carrots, tarragon, bay leaf, seasoned salt and red pepper. Add water to make stew thickness you desire. Bring to a boil and then turn to low. Cook until peas and carrots are done. You can simmer on low until ready to eat. I usually start this around 5 and we eat at about 6:30.
It's really good and everyone has seconds! Serve with hot buttered cornbread or cornmuffins, yum!yum
