1 T. butter
1 med. onion, chopped
2 cans chicken broth
3 cups cubed potatoes
1 (10 0z) pkg. frozen chopped broccoli or 2 c. fresh broccoli
1 lb. velveeta, cubed
2 c. half and half cream
salt & pepper
Melt butter in Dutch oven and add onions, cook until transparent. Add potatoes, broth and salt and pepper. Cook until potaoes are almost tender. Add broccoli. Cook about 10 minutes or until tender. Remove from heat and add cheese. Stir until cheese is melted. Add cream. Add more salt if needed. Keep warm on low. Serve with french bread.

Chicken Enchiladas...
4 chicken breasts (boneless, skinless)
1(8 oz) pkg. cream cheese
1 (4 oz) jar salsa
1 (4 oz) can diced green chilies
12 flour tortillas
1 pt. whipping cream
2 c. grated monterey jack cheese
Boil chicken until tender. Cut into small pieces. Combine chicken, cream cheese, salsa & chilies. Butter both sides of tortillas. Put in chicken mixture and roll up. Place in baking dish, seam side down. Cover with cheese and pour whipping cream over all. Bake at 350 for 30 minutes.
*WOW!!! These are YUMM-O!!! :)

Ferguson chili...
2 lbs. ground beef, drained
2 small onions, diced
1 large can crushed tomatoes
1-2 cans ROTEL (whatever your taste) if using just1 can, add 1 can diced tomatoes, drained
2 tablespoons chili powder
2 teaspoons cumin
1&1/2 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 tsp cinnamon
1 teaspoon cocoa
grated sharp cheddar cheese
sour cream
In a large saucepan, cook the beef and onion over medium heat; drain. Stir in tomatoes, & rotel. Add the seasonings. Bring to a boil. Reduce heat; cover and simmer for 30 minutes to 1 hour. Serve steaming hot with cheese and sour cream.
*warning: this is on the spicy side; most of the time I use 1 can of Rotel & 1 can diced tomatoes. Makes the heat more tolerable for wimps! Haha. :)

poppyseed chicken....
Poppy seed chicken
2 or 3 chicken breasts, boiled and cut in small pieces
1 16 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 tbls of poppyseeds (I don't measure - I just shake a ton in)
Ritz crackers
1 stick of butter
Mix the first 5 ingredients and put in a baking dish. Cover with crushed up ritz crackers. Melt a stick of butter and pour on top. Put more poppy seeds on top. (just sprinkle).Bake for 20-30 minutes at 350.

1 lb. JC Potter Hot sausage
1 small onion, chopped
8 cups diced potatoes

1 can Swanson's MSG free chicken broth
1 tsp. black pepper
3 cups milk or half and half
Lawry's seasoned salt to taste
4 TBSP. butter, melted
Cook sausage.Cube potatoes. Chop onion. Place potatoes and onion in crockpot. Mix soup, broth, melted butter & softened cream cheese together in small bowl. Stir. Pour over potatoes and onion. Add black pepper and seasoned salt (I can't remember how much I used, maybe 1 TBSP?). Cook on low for 8-10 hrs or on high for 5 hrs. Serve with corn muffins (and I made a pumpkin pie, too!)

Jessica Simpson's Chicken & Dumplings (very similar to crescent roll chicken)
*serves 6.
This recipe is very similar to Crescent Roll Chicken and it's very good! :) Maybe she can cook, after all?!
3 tubes croissant rolls
1 small rotisserie chicken, skin discarded and meat removed from bones
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup chicken broth
salt and freshly ground black pepper to taste
Preheat oven to 400ยบ. Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of rotisserie chicken on each diamond, fold dough over and press ends together to create dumplings. Line a 9x13 inch baking dish with one layer of dumplings.
Combine soups and chicken broth; pour over dumplings. Season with salt and pepper and bake until the dumplings are tender and cooked through and the top is brown and bubbly - about 30 minutes. Lay foil across pan about halfway though, because dumplings will brown too quickly.
